Question #5
Pasta Mood board (Section A visual stimuli) Discuss the value of pasta in the diet for an active young adult.

Type your answer, then reveal.
Correct answer: Pasta is high in starchy carbohydrate (low GI), giving slow energy release for an active person. It is a good source of protein and B vitamins, low in fat, and wholemeal pasta provides fibre. It is filling, quick and easy to cook, cheap, widely available, a staple and can be eaten on the go. It is useful for carbohydrate loading before activity (e.g. a race), but excess carbohydrate is stored and turned into fat.
Explanation
Up to 5 marks, banded. Band 3 (4-5 marks): at least 4 factors from the indicative content, clearly reasoned, relevant to an active young adult, with appropriate terminology. Band 2 (2-3 marks): 2-3 nutrients or benefits identified, some reasoning, attempts technical terms. Band 1 (1 mark): basic, one point listed. 0: nothing creditworthy. Indicative content: high in starchy carbohydrate/low GI; protein; B vitamins; fibre in wholemeal; low fat; slow energy release; excess carbohydrate stored and turned into fat; carbohydrate loading; quick and easy to cook; widely available; filling/satiety; staple; inexpensive; can be eaten on the go. Other valid points are credited, as the question does not say nutritional value only.

Question #9
Explain the difference between simple and complex carbohydrates.
Type your answer, then reveal.
Correct answer: Simple carbohydrates (sugars: monosaccharides and disaccharides) are quickly absorbed during digestion, giving a quick release of energy/energy spike. They are mainly sourced from sugar, found naturally and added in manufacturing, and give 'empty' calories with no other nutritional value. Complex carbohydrates (starch, polysaccharides, e.g. potatoes, rice, wheat) release glucose slowly into the blood, giving slow-release energy (lower GI).
Explanation
Up to 4 marks. 4 marks: excellent, balanced explanation covering both simple and complex. 2-3 marks: good explanation, may focus on one more than the other. 1 mark: basic explanation. Other points credited: reference to GI; starch/fibre (non-starch polysaccharide) references credited. Any other acceptable response credited.

Explanation
Up to 4 marks. 3-4 marks: good response with clear knowledge and understanding of how sugar consumption can be reduced, points described and discussed, good technical vocabulary. 1-2 marks: satisfactory response with some knowledge and some reference to the content, attempts technical terminology. 0 marks: not creditworthy. Any other acceptable response credited.
